Ingredients of Rice Kheer:-
- ¼ cup basmati rice or 50 grams
- 1 liter / 4 cups full fat milk or whole milk or full cream milk
- 6 tbsp sugar or add as required
- ½ tsp cardamom powder
- 1 pinch saffron strands
- 1 tbsp almonds, chopped or sliced
- 1 tablespoon cashews, chopped or sliced
- 1 tbsp unsalted pistachios, chopped or sliced
- 1 tbsp raisins
Instructions:-
- Rinse ¼ cup of rice in water 2-3 times. Soak it in 1 cup of water for 20 minutes.
- After 30 minutes, drain the rice using a colander and set aside.
- Take milk in a heavy wide pan. Keep the pan on medium flame. keep on stirring in between so that the milk does not stick at the bottom of the pan.
- Let the milk come to a boil.
- Take 1 tbsp milk from the pan in a small bowl. add a few saffron strands in the milk. Keep aside.
- After the milk begins to boil, add rice to the hot boiling milk. mix very well.
- Simmer and cook on a low flame. No need to cover the pan when the rice is cooking.
- Cook the rice till they are half-cooked.
- Then add sugar. mix the sugar in the milk.
- Continue to cook rice on a low to medium flame. Do stir at intervals. simmer till the rice is almost cooked.
- Then add cardamom powder, almonds, cashews, raisins, and pistachios. mix well.
- Then add the saffron dissolved milk.
- Again mix and continue to cook on a low flame till the rice kheer thickens and the rice has completely cooked.
- Switch off the flame when the rice is completely cooked.
- Pour the rice kheer in serving bowls. You can serve the rice kheer, hot or warm or chilled.
