Rice Kheer Recipe | How to make Rice Kheer Recipe



Ingredients of Rice Kheer:-
  • ¼ cup basmati rice or 50 grams
  • 1 liter / 4 cups full fat milk or whole milk or full cream milk 
  • 6 tbsp sugar or add as required
  • ½ tsp cardamom powder 
  • 1 pinch saffron strands 
  • 1 tbsp almonds, chopped or sliced
  • 1 tablespoon cashews, chopped or sliced 
  • 1 tbsp unsalted pistachios, chopped or sliced 
  • 1 tbsp raisins
Instructions:-
  1. Rinse ¼  cup of rice in water 2-3 times. Soak it in 1 cup of water for 20 minutes.
  2. After 30 minutes, drain the rice using a colander and set aside.
  3. Take milk in a heavy wide pan. Keep the pan on medium flame. keep on stirring in between so that the milk does not stick at the bottom of the pan.
  4. Let the milk come to a boil.
  5. Take 1 tbsp milk from the pan in a small bowl. add a few saffron strands in the milk. Keep aside.
  6. After the milk begins to boil,  add rice to the hot boiling milk. mix very well.
  7. Simmer and cook on a low flame. No need to cover the pan when the rice is cooking.
  8. Cook the rice till they are half-cooked.
  9. Then add sugar. mix the sugar in the milk.
  10. Continue to cook rice on a low to medium flame. Do stir at intervals. simmer till the rice is almost cooked.
  11. Then add cardamom powder, almonds, cashews, raisins, and pistachios. mix well.
  12. Then add the saffron dissolved milk.
  13. Again mix and continue to cook on a low flame till the rice kheer thickens and the rice has completely cooked.
  14. Switch off the flame when the rice is completely cooked.
  15. Pour the rice kheer in serving bowls. You can serve the rice kheer, hot or warm or chilled.
