Gajar ka halwa Recipe | How to make Gajar ka halwa Recipe



Ingredients of Gajar ka halwa:-
  • 8 to 9 medium carrots or 650 grams or 4 cups grated carrots
  • 4 cups full fat organic milk
  • 4 tablespoons ghee 
  • 10 to 12 tablespoons regular sugar  - add as required
  • 1 teaspoon cardamom powder
  • 10 to 12 whole cashews - chopped
  • 10 to 12 almonds - chopped
  • 2 tablespoons raisins
  • 1 pinch saffron strands 
Instructions:-
  1. In a Kadai or pan combine milk and grated carrots.
  2. On a medium flame, bring the whole mixture to a boil and then simmer.  mixture is simmering on a medium flame, keep on stirring in between.
  3. The grated carrots will cook in the milk and the milk will start to reduce.
  4. When the milk has 85% reduced, add the ghee, sugar and cardamom powder to the mixture.
  5. Stir again and continue to simmer and cook on a low flame.
  6. keep on stirring the halwa in between.
  7. Add the cashews, almonds, saffron and raisins.
  8. Simmer the halwa till all the milk is reduced.
  9. Switch off the burner.
  10. Serve gajar halwa hot or cold.
  11. Garnish with some chopped dry fruits while serving.
