Ingredients:-
- ½ cup finely chopped cabbage
- ½ cup finely chopped cauliflower
- ½ cup finely chopped capsicum
- ½ cup finely chopped green beans
- ½ cup chopped onions
- ½ cup potato, shredded
- 1 green chilli, chopped
- ½ tablespoon ginger paste
- few curry leaves, finely chopped
- 2 tablespoon coriander, finely chopped
- ½ teaspoon carom seeds
- ½ teaspoon turmeric
- 1 tablespoon salt
- ½ teaspoon red chilli powder
- ½ teaspoon garam masala
- ½ teaspoon aamchur
- 1 cup besan / gram flour
- 2 tablespoon rice flour
- ¼ cup water or add as required
- Oil, for frying
Instructions:-
Making batter for Vegetable Pakora:-
- Rinse, peel and then chop all the veggies. You can even grate the veggies.
- Take all vegetables in a large bowl.
- Add chopped onions, green chilies, ginger paste, few curry leaves, and coriander leaves.
- Then add carom seeds, turmeric, chili powder, garam masala, amchur, and salt. Mix everything very well.
- Now add besan and rice flour. mix well.
- Then add some water and mix again very well.
- Mix to a thick yet flowing batter.
Frying Vegetable Pakora:-
- Heat oil for deep frying.
- Grease hand with oil and drop small ball-sized mixture into the hot oil.
- Fry pakoras on a medium flame.
- When one side is cooked and lightly golden, flip and fry the other side.
- Flip a couple of times and fry till the pakoras are crisp and golden.
- Drain them on kitchen paper to remove extra oil. Fry the pakoras in batches this way.
- Serve vegetable pakoras with any chutney or sauce or tea.
